A cool and healthy treat for summer!
Chill watermelon wedges in freezer or refrigerator until cold but not frozen.
Melt the chocolate in a heat-resistant bowl over a saucepan of simmering water - the bottom of the bowl should not touch the boiling water.
Once completely melted, set the chocolate aside and let it reach room temperature.
Take the watermelon wedges and gently coat the tops with the melted chocolate using a small spatula, or dip each piece into the melted chocolate to coat. Ensure that the surface of the watermelon is free of liquid water prior to coating with the chocolate.
Place on a serving platter.
As an option you can sprinkle chopped pistachios onto the chocolate before it sets.
Can be served immediately, or chilled in the refrigerator for 20 minutes before serving.
