In a food processor or blender crush the M&M'S until they are half chocolate dust and half little candy pieces. Set aside. Chop or grate the American Heritage® Chocolate block into very small pieces.
In a glass bowl, microwave the cream for 1 minute. Add the chocolate into the cream and stir until the chocolate is all melted. If the chocolate doesn't get all melted by the warm cream then stick the bowl into the microwave for about 30 seconds. Stir until creamy and smooth.
Smooth the chocolate over with a spatula and place in the fridge. In 45 minutes check the chocolate. It should be pliable and cold and easy to work with and shape. If it's not to that state yet let it chill in the fridge longer. If it's too hard let it sit out for a few minutes to soften up.
Using a small cookie scoop, scoop out the chocolate and roll into a ball. Roll into the crushed M&M®s and place on a parchment lined plate or cookie sheet. Repeat this step until all the chocolate has been used. Place truffles in the fridge and let harden for about 30 minutes. Eat and enjoy!
