    This recipe is inspired by a Chocolate Puff recipe first published in 1786 by Elizabeth Raffald in The Experienced English Housekeeper. The original receipt says to “Sugar your papers, and drop them on about the size of a sixpence, and bake them in a very slow oven.”

    Beat the egg white stiff.

    Step 2

    Add the superfine sugar and 1 oz. grated chocolate, stirring until well mixed.

    Step 3

    Drop on baking paper and bake in a slow (300 degree) oven for 25-30 minutes. The puffs will double in size.
