    Combining soft, homemade cookies with a creamy peanut butter filling for a delectable treat.

    ingredients
    • 9 oz American Heritage® Collectible Tin
    • Cookies:
    • 18 ounces all-purpose flour
    • 2¼ ounces cocoa powder
    • 1 tablespoon baking soda
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • 8 ounces butter, room temperature
    • 14 ounces granulated sugar
    • 2 eggs
    • 1 pint buttermilk
    • 2 teaspoons vanilla extract
    • Peanut butter filling:
    • 11 ounces creamy peanut butter
    • 8 ounces butter, room temperature
    • 6 ounces confectioners’ sugar
    Step 1

    Cookies:
    Preheat oven to 375 degrees F.
    Combine flour, chocolate, cocoa powder, baking soda, baking powder and salt. Set aside.

    Step 2

    Cream butter and sugar until light and creamy. Slowly add eggs, buttermilk and vanilla. Stir in flour mixture and blend until thoroughly mixed.

    Step 3

    Scoop batter with a ¾-ounce scoop, and transfer to parchment lined full sheet pans. Bake for 8 to 10 minutes in convection oven. Cool completely.

    Step 4

    Filling:
    Cream butter and peanut butter until light and fluffy. Stir in confectioners’ sugar until blended.

    Step 5

    Transfer to a piping bag fitted with medium round or star tip. Pipe filling on the flat side of half the cookies. Top with a second cookie. Tightly cover and refrigerate until ready to serve. Bring to room temperature before serving.
