    AMERICAN HERITAGE® Chocolate Individual Toffee Chocolate Pudding

    ACTIVE TIME: 10 minutes

    • 1 Cup American Heritage® Chocolate Bites
    • Cakes:
    • ½ teaspoon baking soda
    • 10 pitted dates
    • 3 large eggs
    • ¼ cup canola, vegetable or coconut oil
    • 1 teaspoon vanilla extract
    • Toffee:
    • ½ cup unsalted butter (1 stick)
    • ½ cup sugar
    • ½ cup heavy cream
    • ½ teaspoon vanilla extract
    Step 1

    Preheat oven to 350

    Step 2

    Line muffin tin with decorative cupcake liners.

    Step 3

    With a food processor, pulse chocolate with baking soda until it resembles coarse sand.

    Step 4

    Add dates and pulse until chopped and blended. Add eggs, oil and vanilla.

    Pulse until blended.

    Step 6

    Using ¼ cup measure, spoon batter into cupcake liners.

    Bake in 350-degree oven for about 20 minutes, until inserted toothpick comes out clean.

    Toffee Sauce:
    In a medium saucepan, melt butter. Add sugar and cook over medium heat, stirring frequently, until sugar is melted and mixture is a deep amber color.

    Step 10

    Slowly stir in heavy cream and vanilla. Continue cooking until syrup coats back of spoon.

    Step 11

    Using a skewer, poke about 8 holes in each cupcake. Spoon toffee syrup over top of cake, making sure syrup goes into holes.
