    • 1 Cup American Heritage® Finely Grated Chocolate Drink
    • Cupcakes:
    • ½ cup AMERICAN HERITAGE® Chocolate Drink Mix
    • ¾ cup flour
    • ¾ teaspoon baking powder
    • ½ teaspoon baking soda
    • 2 large eggs, room temperature
    • 1 cup brown sugar
    • ? cup coconut oil
    • 2 teaspoons vanilla extract
    • ½ cup buttermilk
    • Frosting:
    • ½ cup AMERICAN HERITAGE® Chocolate Drink Mix
    • ½ cup sugar
    • 1 cup butter
    • ¼ cup cream
    • 2 teaspoons vanilla extract
    • Pinch of salt
    • Extras:
    • 12 large marshmallows
    • Several mini marshmallows (optional for
    • decoration)
    Step 1

    Preheat oven to 350 degrees.

    Step 2

    In a large bowl, mix the dry ingredients for the cupcakes together until blended.

    Step 3

    In a large bowl, whisk together the wet ingredients for the cupcakes until smooth.

    Step 4

    Slowly pour the wet ingredients into the dry ingredients and mix well until smooth.

    Step 5

    Add the buttermilk slowly to the mixture. Do not over mix.

    Pour batter into large cupcake liners. Fill halfway only!

    Step 7

    Bake for 20 minutes or until toothpick comes out dry.

    Step 8

    Let it cool for 10 minutes.

    Step 9

    With a paring knife, cut out a well in each cupcake and fill with a large marshmallow (keep crumbs for decoration).

    Step 10

    Place back in oven for 5 minutes to allow marshmallow to puff and melt.

    Remove and place on cooling rack while preparing frosting.

    For the frosting, use an electric beater and mix all the ingredients together until a smooth creamy texture. Add an extract flavour of your choice to make the cupcake a little more fun. Peppermint and coffee are great options!

    Step 13

    Using a piping bag, pipe frosting on the cupcakes, sprinkle with the
    crumbs and decorate with mini marshmallows.
