    Marshmallow Mint Fudge Ice Box Pie

    • Crust:
    • 9 whole graham crackers
    • 7 tablespoons unsalted butter, melted
    • ¼ cup packed brown sugar
    • pinch of salt
    • Filling:
    • 1 ½ cups plain cream cheese
    • 1 tub marshmallow cream
    • 1 tsp peppermint extract
    • 1 cup cream
    • ½ cup superfine sugar
    • 6 drops red food coloring
    • Chocolate Sauce Layer:
    • ½ cup cream
    • 1 tablespoons sugar
    • 1 tablespoon unsalted butter
    • Chocolate Drink Mix
    • ½ teaspoon vanilla extract
    • Toppings:
    • 1 cup cream, whipped
    • ½ cup superfine sugar
    • crushed candies
    • mini marshmallows (optional)
    Step 1

    No-Bake Graham Cracker Crust:
    In the bowl of a food processor fitted with a blade attachment, pulse the graham crackers into a fine crumb. Add the remaining ingredients and blend until combined.

    Step 2

    Press the graham mixture into a 9-inch pie plate and chill in fridge while making the chocolate sauce.

    Step 3

    Chocolate Sauce:
    In a medium saucepan over medium heat, combine all ingredients and whisk until melted, about 5 minutes. Pour onto graham cracker crust and place in fridge while you make the filling.

    Step 4

    In a bowl, whisk the cream cheese until smooth (3o seconds) and gently mix in the marshmallow cream. Add the peppermint extract.

    Step 5

    In another bowl, whip the cream and slowly add the superfine sugar and the red food coloring until lightly tinted.

    Step 6

    Gently fold the cream cheese and the whipped cream gently together. For red swirls add few more drops of food coloring but do not stir in too

    Step 7

    Pour onto the set chocolate layer and chill for 3 hours

    Step 8

    For the topping, whip the cream and sugar and spoon onto the pie. Decorate with candy of your choice or mini marshmallows.

    Step 9

    a. For a chocolate mallow mint filling, add ¾ cup of AMERICAN HERITAGE®
    Chocolate to the filling mix. After topping the pie with cream, lightly sprinkle with
    chocolate powder or finely grated chocolate.
    b. For a coffee-chocolate filling, add 3/4 cup AMERICAN HERITAGE® Chocolate
    to the filling mix. In a small bowl, dissolve 2 teaspoons coffee in 1 teaspoon hot water.
    Once melted, add to the mix. Do not use too much water to dissolve the coffee or it
    will make the filling runny. After topping the pie with cream, sprinkle with chocolate
    dust or chocolate shavings.
