    Williamsburg Lodge American Heritage® Chocolate Truffle

    From the Williamsburg Lodge, a delicious truffle highlighting the unique flavor of American Heritage® Chocolate

    • Chocolate Dough:
    • 1 ½ cups All Purpose Flour
    • 6Tb. Cocoa Powder
    • Pinch Salt
    • ¾ cup Butter, Softened
    • 7 Tb. Sugar, Granulated
    • 1 Egg Yolk
    • 1 ½ tsp. Heavy Cream
    • Ganache:
    • 17 oz. American Heritage® Chocolate Block, Chopped
    • Butter, Softened
    • 4 ½ Tb. Light Corn Syrup
    • Heavy Cream
    • Crème de Cocoa
    Step 1

    For Dough:
    1. In an electric mixer with a paddle attachment, beat butter and sugar at medium speed until light and fluffy.
    2. Slowly add egg and cream, scraping sides and mixing till smooth.
    3. Separately, combine and sift dry ingredients.
    4. Add dry ingredients to butter mixture and mix just until combined.
    5. Scrape dough onto a lightly floured surface and shape into disc. Wrap tightly and allow to chill for at least one hour.
    6. On a floured surface, roll to approximately 1/8 of an inch, at least 13” circle and press into a 10” fluted tart pan.
    7. Bake at 350, about 12 minutes; set aside and allow to coll.
    For Ganache:
    1. Place chocolate, butter and corn syrup in a medium bowl.
    2. In a small sauce pan heat cream to a scald.
    3. Pour hot cream over chocolate mixture and allow to sit for a few minutes.
    4. Gently stir the mixture until it comes together, it should be shiny and smooth.
    5. Stir in the liquor until smooth
    6. Pour into the crust and refrigerate until filling is set.
    7. Using a hot knife cut into 12 and serve.
