    Strawberry Cream filled Chocolate Crepes with Espresso Whipped Cream

    A slightly sweet, tender crepe filled with strawberry cream and topped with espresso whipped cream.

    ingredients
    • For the Crepes, 1/4 cup American Heritage® Collectible Tin
    • 4 large eggs, at room temperature
    • 1 cup whole milk, at room temperature
    • 1/2 cup flour
    • 2 Tablespoons granulated sugar
    • 1/4 teaspoon salt
    • For the Filling:
    • 1 cup strawberry preserves
    • 1 cup mascarpone cheese, at room temperature
    • For the Espresso Whipped Cream:
    • 1 cup cold heavy whipping cream
    • 1 Tablespoon granulated sugar
    • 1 teaspoon pure vanilla extract
    • 1/4 teaspoon espresso powder
    • American Heritage® Chocolate Block, grated
    Step 1

    Combine all the ingredients for the crepes into the container of a blender. Blend well until the mixture forms a smooth batter. Set aside and let the batter rest for 10 minutes.

    Step 2

    Preheat a 10-inch non-stick crepe pan or skillet over low heat. Melt a small pat of batter in the pan. Add 1/4 cup of batter to the pan and quickly tilt it from side to side to form an even coating on the bottom of the pan. Cook until set, about 1 minute, then carefully loosen the sides of the crepe with a heat resistant spatula and gently flip over. Cook the other side for an additional minute. Repeat with the remaining batter, adding a pat of butter to the pan each time.

    Step 3

    For the filling, mix the strawberry preserves and marscapone in a small bowl until well combined. Spread about two tablespoons of the jam mixture on a crepe, leaving a small border around the edge. Fold the crepe in half, then in half again, to form a little triangle. Repeat with the rest of the crepes.

    Step 4

    For the whipped cream, combine all of the ingredients in the bowl of your stand mixer and with the whisk attachment, whisk on high speed until stiff peaks form, about 3 minutes. Alternately, you can use a hand mixer.

    Step 5

    Place one prepared crepe on a plate and top with a dollop of the whipped cream. Using a fine grater, grate the American Heritage® Chocolate Block over the top or use the American Heritage® Finely Grated Chocolate Drink. Repeat with the remaining crepes until all are served.
