Beat eggs till fluffy. Set aside
In a separate bowl, blend flour, salt, baking powder. Set aside.
In small saucepan, warm milk and butter, then add in American Heritage® Finely Grated Chocolate Drink mix. Stir constantly until chocolate is melted. Do not allow milk to boil/bubble.
When chocolate has melted, remove pan from heat and allow to cool to just warm (stir occasionally to keep a film from forming).
Gradually whisk in egg, then flour into the milk mixture, being careful not to let it get lumpy. (If it gets lumpy you may have not cooled the milk mixture enough, or added the flour too quickly). Whisk until you have a smooth, thin batter.
Grease and heat a small frying pan or crepe pan, to medium. Then pour about 1/3 cup of crepe batter into the pan. Tilt the pan until all batter is spread very thinly across the entire pan bottom.
Cook crepe until bottom slides easily off the pan, about 2 minutes. Flip and cook for about 1 more minute until crepe is cooked through. Flip onto a plate, and immediately fill with any desired filling or fold into thirds for topping.
Top with whipped cream and use a micro-plane to finely grate American Heritage® Chocolate Bites on top.
Serve immediately. Makes 8 crepes.
